1 lb dried red kidney beach that have soaked in water overnight.
1/2 lb salt port or use a ham bone
1 qt water
3 cups chopped onions
1 bunch green onions, chopped
1 T parsley
1 cup bell pepper, chopped
garlic
salt (to taste)
1 t red pepper
1 t black pepper
1 T Worcestershire sauce
1 (8 oz) cab tomato sauce
1/4 t oregano
1/4 t thyme
1 lb link sausage, sliced thin
Several drops Tabasco (optional to taste)
Pour water off beans. Cook beans and salt port in water slowly 45 minutes. Add vegetables, seasonings and tomato sauce. Cook slowly another hour, stirring occasionally. Add sausage and cook 45 minutes more or until beans are soft. Serve over rice.
