Ingredients:
1 lb pasta
1 head of broccoli, cut in florets
1 red bell pepper, julienned
1 6.5oz jar marinated artichoke hearts
1 cucumber, diced small
1 can sliced black olives
1 tomato, diced small (optional)
1/4 cup grated Parmesan cheese
salt and pepper to taste
1/2 bottle Italian Salad Dressing
Prepare:
Bring a large pot of lightly salted water to a boil.
Add pasta and cook for 8 minutes.
Add broccoli and cook for 2 minutes more.
Drain pasta and broccoli and rinse with cold water 'til cool.
Mix:
In a large bowl, combine pasta, broccoli, red pepper, cucumber, black olives, tomato, the artichoke
hearts with their marinade, Parmesan cheese, salt and pepper and Italian dressing.
Toss, adjust seasoning and serve. (Can be made the day before.)
