Chunky Potato Soup
Ingredients: 3 T butter or oleo 1/2 t salt 1/4 cup flour 1/2 t black pepper 4 cups milk Grated cheese 2 1/2 cups diced potatoes Cooked Bacon 1/2 cup chopped onion Melt butter in a heavy saucepan over low heat. Add flour, stirring till smooth. Cook 1 minute, stirring constantly. Gradually add milk. Stir in potatoes, onion, salt & pepper. Cook over medium heat, stirring frequently until mixture is thickened & potatoes are done. (About 1 3/4 hours) Sprinkle cheese and crumbled bacon on top of servings. Serves 4. |
